    Hi Everyone,

    I love cooking and also entertaining. This is a Dessert Cake that I use when entertaining! I have tried other desserts, BUT…when I invite people over, they ALWAYS request this!

    MAGGIE’S DECADENT CHOCOLATE DESSERT

    · 150g dark (92% Cocoa Solids) Chocolate
    · 75g butter or Margarine (which ever you prefer)
    · 125ml Cointreau Liqueur
    · 6 medium eggs, separated
    · 150g castor sugar
    · ½ cup of good quality honey
    · ½ cup finely chopped almonds
    · 1 tablespoon Almond Meal
    · 50g self-raising flour, sifted
    · 55g cocoa powder

    A REAL TREAT FOR A SPECIAL DINNER!

    Preheat oven to 180C (170C if you have a fan-forced oven). Grease a 24cm spring-form tin with butter,oil or Margarine then line. (I use greaseproof paper)

    Melt the Quality Dark chocolate and butter (Or Margarine) in a bowl placed on a saucepan with gently simmering water. One Melted Add the Cointreau Liqueur and gently stir until combined. Leave to cool.

    Whisk egg yolks with sugar until light and fluffy. Add the chocolate mixture, honey, and chopped almonds. Stir until well combined.

    Beat the egg whites until stiff peaks form very carefully fold into the chocolate with the sifted flour,cocoa powder and almond meal.

    Pour into the prepared tin and bake for 50-60 minutes. Test by inserting a skewer in the centre - if it comes out clean, it's ready. Cool in the tin before turning out.

    Serve with Homemade Ice Cream or Cream Or on its own with a Cointreau Coffee!

  • Chocolate recipes over 100 years old

    Part of who I am is a writer and on-line business developer. I have recently enjoyed writing a Chocolate Recipe book, with recipes dating to 1900’s! This is currently being sold on one of my websites, which is dedicated to Chocolate!

    To do this research was eyeopening. The recipes are amazing and I tried and tested each and every one of them. Converting the measurements of each recipe was also fun.

    All the recipes were made with Dark Chocolate. (To cook them today you would need to cook with Quality Dark Chocolate with more than 72% cocoa solids otherwise the taste and texture would not be the same). What was totally amazing is back then, they saw Dark chocolate as a “Health Aid”. No need for the scientific evidence that is so revered today.

    Baron von Liebig, one of the best-known writers on dietetics, way back then

    "It is a perfect food, as wholesome as delicious, a beneficent restorer
    Of exhausted power; but its quality must be good and it must be
    Carefully prepared. It is highly nourishing and easily digested, and is

    Of course today we can obtain good quality dark chocolate with 72% or more cocoa solids that is beneficial for ones health, but I think that it is sad that so many people consume the cheap milk chocolate that really does not resemble chocolate at all and has no health benefits (but many fattening calories).

    Another interesting statistic that I came across was this

    The figures on the consumption of Dark Chocolate between 1860 and 1908 in USA…

    The amount retained for home consumption in 1860 was only 1,181,054
    pounds--about 5 ounces for each inhabitant.

    The amount retained for home consumption for the year ending Dec. 31, 1908, was 93,956,721 pounds--over 16 ounces for each inhabitant.

    The recipes I came across were for cakes, sweets, slices and hot chocolate, each one delicious with ingredients that did not have chemical sounding names to them, and NOTHING from a packet! HOORAY!!

    No need to reach for an anti-oxidant tablet – just eat a slice of cake!

    What I also found out was a cup of “Hot Chocolate” was served at the end of a meal instead of coffee like today because “Hot Chocolate” was a digestive aid.

    Well my oven has just “dinged” so I must go and see if my latest recipe has cooked OK, this one will be in my second book. There will be 3 books in the series. All e-Books.

    Don’t you just love cooking and researching! I know I do!

  • Have you ever had one of those days?

    Well today is one of those days!

     

    All I want to do is doze, watch a couple of DVD’s (I rarely get to watch TV or a movie) and shut the world out it is cold outside (Yes Aus. does have cold grey days)

    My Inner child is saying, curl up and do what you want.

     

    I agree but –

     

    The meter reader came, the phone wont stop ringing,

    Do I unplug it or what?

     

    I leave it on answer machine, but it still disturbs me!

     

    Coffee yes!  That’s the answer, but alas no milk, black coffee YUK!

     

    Hot chocolate?  Not nice unless made with milk!

     

    Biscuits – gone – block of chocolate – gone -

     

    Have you ever had one of those days?

  • Anyone write lists and love chocolate?

    Gorgeous day outside, I will have to go into my garden soon, as I am getting Computer boggle eye and mouse lash neck. Yikes! Where is my personal Masseuse. do the Rich and famous have them everytime they have a crick?

    Maybe I will cut back some of the perennials and strike them so as I can add to my collection. No I dont have a green thumb, but keep tryin'

    I have decided to put on special, my Chocolate Recipe book with 100 year old recipes(one of my on-line businesses)as I have another 2 follow-up books for Chocolate sweets, candies and biscuits yet to come on line. Must add that details on my “to-do” list, which grows hourly.

    Yes I know you are supposed to make a daily list, check it twice, number it in importance and follow it, but I cannot do that, it doesn’t work for me, I just add to list, and tick off as I go.

    Anyone else a list follower? How do you go?

    Anyone a Chocolate lover? Or am I the only Feral Chocolate lover on the planet?

    I adore eating and just love cooking with quality hand made Dark Chocolate. Of course the benefits of eating such good quality chocolate. Yum!
